De Buyer | Mineral B Element -frying pan, charcoal steel, 26 cm

A professional chef’s frying pan with excellent frying properties and an almost eternal lifespan! A carbon steel pan is a good alternative to Teflon pans, and like cast iron requires a little care. A well-maintained carbon steel pan develops a natural non-stick surface formed by fat and coal, which reduces the need for maintenance and increases non-stickiness. The much-used carbon steel pan even has the frying properties of a cast iron pan and the non-stick properties of a Teflon pan! In addition, you can also use metal tools with the pan without worry.

The De Buyer Mineral B series is pre-treated with a completely natural and chemical-free organic beeswax coating. The coating protects the pan from rust and helps in commissioning the pan. It forms the first frying surface on the carbon steel, improving the non-stick properties of the pan at the same time. Wash the pan with hot water from possible storage dust before the first use – most of the beeswax will be removed from the surface. The small amount of wax that remains is not harmful, but on the contrary helps in putting the pan into use. Carbon steel is not as porous a material as cast iron, so you can fry all ingredients without worry. In raw materials with a high protein content, such as eggs or white fish, you should be careful and lower the temperature considerably. You shouldn’t try to keep carbon steel the color of bright steel, it will change color during use. The inner surface of the pan darkens and when the inner surface is completely black, it is its natural non-stick surface at its best.

The carbon steel pan must not be washed in the dishwasher, when washing by hand, just hot water is usually enough. You also cannot store food in a carbon steel pan or leave it in the sink to get dirty because of rusting. If surface rust appears on the pan, it is not unusable, but the rust can be removed with, for example, a coarse sponge or steel wool. It is also recommended to apply a drop of rapeseed oil to the pan after use, washing and drying, so that surface rust does not occur during storage.

Suitable for all heat sources and hobs, including induction hobs. The frying pan can also be used in the oven (200 °C max 10 min).

The pressed body of the carbon steel pan may sometimes warp a little. To prevent this, you should avoid putting a hot pan in cold water. Also using the pan at full stove power may cause warping. If warping can occur, it is recommended to warm the pan a little first and place it on a durable base upside down and tap the bottom of the pan with a hammer in the middle.
