Lightweight and fast-heating flat-bottomed paella pan. Made of cold-rolled carbon steel. Designed for use with a gas burner and/or wood fire. Avoid overheating the pan, do not place an empty pan on an open fire. Note! The pan does not have any kind of non-stick surface treatment.
The inner surface has a temporary anti-rust treatment, which must be removed before use: Boil water in the pan before first use. Then wash the pan with water and detergent. Dry it immediately after washing, do not leave it to dry outdoors. Lightly grease the inside with cooking oil (or Muurikka lard), the fat prevents rusting and improves the frying properties of the pan. After this, the product is ready for use. Lightly grease the pan with oil both inside and outside after each use.
If the pan is not dried immediately after use, its inner surface may rust. Remove rust and/or burnt brownish-mottled grease with a sponge, steel wool or grill brush, wash with hot water and dry and degrease the surface. The brownish-mottled burnt grease layer that forms on the surface during use protects the pan from rust and it is normal for the surface of the pan to become mottled after use. The fat burning process must be repeated whenever it is damaged or washed away.
